Lemony Chickpea Stirfry from 101 Cookbooks. I haven’t made it, but let’s review the bidding:
1. One-skillet dish. For lo, I am lazy.
2. Ingredients include chickpeas, chopped kale, summer squash, and just a smidge of tofu. Or, Things That Ten Years Ago I Would Have Never Dreamed Would Be Three of My Favorite Foods. Tofu I prefer in smidges.

Edit 9/9/08 – I made this last night. It was tasty. I brought it for lunch today. Texturally, it does not hold up very well to reheating. 😦
